Pumpkin Soup Recipe

There is something so special about each season – I love how nature changes throughout the different seasons, and I love the nutritional variety each season offers! I make it a priority to eat seasonal, so I am always super excited about autumn as I love trying out different pumpkin recipes. But so far nothing beats a homemade pumpkin soup:) I have tried many different recipes throughout the years, and this year decided to experiment with my own version…….and I love it:)

Ingredients for 2 servings:

  • one mid-sized pumpkin
  • 1 cup veggie broth
  • 1 cup coconut milk
  • 1 onion (chopped)
  • 2 garlic gloves
  • coconut oil
  • salt

Instructions:

  • cut the pumpkin in larger cubes, and you can either steam them (the healthier version), or you can boil them in the veggie broth for about 20min (check with fork whether the pumpkin needs a few more minutes)
  • add some coconut oil in a pot, and add the onions, followed by the garlic for a few minutes
  • add all the ingredients (except coconut oil) in a blender and blend until smooth
  • add some salt if required

I prefer my soups a little thicker, if this is not the case with you then you can add some water or veggie broth to make it more liquid.  If you want some variety, you can also add a carrot or / and sweet potato (cook/steam  them together with the pumpkin for about 20min). It is super easy to make, and at the same time yummy and healthy.
